General Info

Chef Todd received his culinary training at Le Cordon Bleu Los Angeles where he graduated at the top of his class Summa Cum Laude and was awarded a Diplôma in Patisserie & Baking. He was trained in classic French techniques applied to American baking such as cakes, muffins, cookies, pies and scones and to European and Middle Eastern baking such ciabatta, tiramisu, challah, baklava, lavash, danishes in addition to croissants, éclairs, macaroons, baguettes and advanced sugar & chocolate work. Todd did his externship at Ink by Michael Voltaggio and has staged at Bouchon Bakery by Thomas Keller and Acabar by the French brothers Frederic and Nicolas Meschin and Sue Choi of The Little Door. Todd grew up in the sunny city of Miami, FL, a city known for its beautiful beaches, pop culture and as the capitol of Latin America. He began his journey into baking along side his grandmother Rose whose specialty was coconut cake. When his family moved from Miami to Panama City Beach when Todd was 10, he continued baking, making cakes and cookies for his mom, brother and sisters. In college, Todd didn’t bake due to not having a stove in his dorm room. Instead, he ate many dessert treats baked by his female friends who luckily had access to an oven. Todd moved to Minneapolis, MN after graduation and it was there that he met his now husband and began to get reacquainted with baking. The city of Minneapolis is full of wonderful bakeries which influenced his taste for quality and sizable baked goods. Road trips to South Dakota to visit his mother-in-law Lorene, who he took baking tips from, gave him a true appreciation for home-baked goods that bring back the best childhood memories. While living in Minneapolis, Todd taught middle school Science and Christopher worked in retail. Christopher was asked to come to Los Angeles on a three month assignment. The assignment became permanent and for almost 10 years West Hollywood/LA is home to the two and they consider themselves true Angelenos. Chef Todd and Christopher Fitzgerald decided to create FITZ bakery with the idea that “Dessert should be worth it!” FITZ bakes its pastries in a commercial cottage kitchen. A selection of FITZ pastries are offered at the Melrose Place Farmers Market, online and through catering.
