In my honest opinion these bagels are the best I've ever had. The owner, Steve Aziz, is very much a hands on manager. What I appreciate most about his bagels is that he makes them "the old fashioned way." With passion and skill. He explains that, "To make a quality bagel you don't take shortcuts."First, after forming the dough, he boils it under pressure in water that is purified and contains a little malt to give them a beautiful shine. No additives or preservatives are added to his bagels to lengthen shelf-life. "My bagels are always fresh because my customers deserve the best bagel that money can buy. The newest batch goes on top of the previous batch to assure that you are always getting the freshest possible." And they are large.
