In February of 2000, Veronica Esparza opened Absolutely Delicious Cafe in San Antonio as the first step toward her goal of becoming one of the city's leading caterers. Along with a staff of two, she served diners in her 24-seat restaurant and began catering for weddings for up to 400 people. By 2001, the business had grown rapidly and she incorporated. In December of that year, she was awarded a contract by the University of Texas Health Science Center at the Texas Research Park. She moved her operations there. This was a milestone event and became the springboard for the level of success the company is enjoying today. The staff of Absolutely Delicious Catering, LLC now stands at 13 full-time and 15 part-time employees and can provide service for events hosting more than 7, 000 people.
