Any night downtown should begin with a visit to Napasorn. The red curry is fantastic and thai staples like chicken satay and pad thai are great. Sushi is also available with the same attention to preparation and taste you would expect from a traditional sushi bar. Only drawback is beer and wine only. But there's the rest of downtown for that.
