If you like good meat, then you need to go here. Every thing I've gotten here has been first rate. Tim Herman has been in the business a long time, and can help you if you aren't sure what you want, and can make recommendations that in my experience are improvements on what I initially had in mind. For example, every year I make fresh bratwurst for an Octoberfest party I throw. This past year, Tim recommended I try some pork belly meat (which is bacon when cured) instead of going with back fat. The result was a slightly leaner and more flavorful brat - the best I've eaten. The prices are the premium you pay for this service, but for the special occasion, they are well worth it. You won't be sorry.
