  Not Neutral introduced the Gino this year and provided us with a wonderful third option on our brew bar. The Gino boasts excellent heat retention thanks to the design of its walls. Unlike the Chemex and V60, the Gino has only three small holes in its base, making for a more steady draw-down. Coupled with the thicker, ridged paper filter this device yields a clean cup that emphasizes sweetness in the body. A coarse grind on a bright coffee will shine in ways that our other two devices can't quite capture by framing it in an even body. Comfort coffees yield decidedly pleasant results. After months of heavy daily use, we can vouch for its hardiness. This kettle is built to boil up to 1L of water on a stovetop (gas or electric), has a thermometer built into its lid, and chambered walls to insulate your water and keep it up to temp while you brew. Not only that, but its matte black finish is terribly attractive. Throw in a counter-balanced handle which is saving our baristas' wrists, and you've got a keeper.
