China produces seven quality grades of Jasmine tea. Our Jasmine Blossom blend has downy silver tips and most of the spent jasmine blossoms have been removed. It has an intoxicating aroma and a balanced and delicate flavor. This romantic tea may be enjoyed any time of the day but is especially pleasant in the evening. The delicate Jasmine flower opens only at night and is plucked in the morning, when the tiny petals are tightly closed. Between six and eight in the evening, as the temperature cools, the petals begin to open. It is reported they emit a "popping" sound when they open, which is the signal for the scenting to begin. Flowers and tea are "mated" in machines that control temperature and humidity. It takes four hours or so for the tea to absorb the fragrance and flavor of the Jasmine blossoms, and for the highest grades, this process may be repeated as many as seven times. Because the tea has absorbed moisture from the flowers, it must be refired to prevent spoilage. The spent flowers may or may not be removed from the final product, as the flowers are completely dry and contain no aroma. They simply add visual appeal and are no indication of the quality of the tea. Note: The 1000 ct tea bags are packaged loose in a box

Dragon Phoenix Pearl Jasmine gets its name from the visual characteristics of the tea bushes, which climb the hillsides like a dragon rising from water. Furthermore, the tea pickers give the appearance of dancing phoenixes next to the dragon's long and slender body. The white tea is plucked in April and May and stored until August when the finest jasmine blossoms are in bloom. Night-blooming white jasmine flowers are picked in the morning while the tiny petals are tightly closed and set aside until nightfall. The petals begin to pop open in the cool night air, which is the signal for the scenting to begin. Once open, the "marrying" of the jasmine and the tea takes place in several applications-each taking up to four hours-after which the jasmine petals are removed. Each leaf and bud set are then skillfully hand-rolled into a tiny pearl-sized ball. Once rolled, the tea is then wrapped in silk mesh and dried by fire to set the form. During infusion, the hot water causes the tiny pearls to open like flowers and sink slowly to the bottom of the cup. We recommend placing 18 to 20 of these tiny pearls in a clear glass cup to watch their graceful unfurling, a process also known as "the agony of the leaves". - Rosebud Black Tea100 G Loose: $7.50Portland, Oregon, known as the City of Roses, is the home of Stash Tea. The metropolis's unique combination of rich volcanic soil and abundant moisture, coupled with a long, mild spring, creates the perfect conditions for growing world-class roses. Prized since the dawn of history, roses are known as the queen of flowers. In 1985, Stash Tea developed this special tea blend in honor of the Portland Rose Festival held each June. To create this romantic blend, we combine fragrant Rose Congou black tea from China with natural raspberry flavor. Although China produces a lot of great black teas, very little black tea is consumed within the country itself. Rose Congou, however, is one notable exception. The black tea is spread with rose flowers while oxidizing; this exposure to aromatic rose petals lends a mild, flowery fragrance to the tea and creates a naturally scented, sweet cup. A few rose petals are left in the tea as decoration. Our Rosebud black tea yields a smooth and aromatic cup when brewed. The tea is wonderfully aromatic, with a fresh quality that invokes the essence of damask roses. Rosebud tea is especially delightful with a touch of honey
- Organic Jasmine Green Tea100 G Loose: $9.95An organic choice for those who savor the delicate yet distinctive flavor of jasmine tea. Nearly translucent in the cup, this tea is an excellent introduction to jasmine teas which are known for their appealing aroma. Jasmine tea is made by sprinkling jasmine flowers over green tea leaves which then absorb the flowery aroma. The jasmine flowers are plucked in the morning when the tiny petals are tightly closed. Then, as the evening cools, the flowers begin to open, emitting a "popping" sound that signals that the scenting is beginning. It takes about four hours for the tea leaves to absorb the fragrance and flavor of the jasmine blossoms. The tea is then re-fired to remove the excess moisture from the jasmine blossoms. The spent flowers are then removed from the tea. As the flowers are completely dry and contain no more aroma (moisture), they add only visual appeal and do not indicate the quality of the tea. - Jasmine Yin Hao Green Tea100 G Loose: $16.50Our Jasmine Yin Hao is a high-quality jasmine tea that has an incredibly fragrant aroma and a balanced and delicate flavor. Sweet and light, it is smooth, medium-bodied, and has absolutely no astringency. For the top grades of jasmine tea, leaf plucking commences in April and early May. Because the jasmine vines do not bloom until July and into September, however, this base tea must be kept in storage in anticipation of the arrival of the blossoms. Night-blooming white jasmine flowers are picked in the morning while the tiny petals are tightly closed and set aside until nightfall. The petals begin to pop open in the cool night air, which is the signal for the scenting to begin. Once open, the "marrying" of the jasmine and the tea takes place in several applications-each taking up to four hours-after which the jasmine petals are removed. It takes four hours or so for the tea to absorb the fragrance and flavor of the jasmine blossoms, and for the highest grades such as Jasmine Yin Hao, this process may be repeated as many as seven times

This unique drink is tasty and aromatic. It brews up a warm reddish-brown color and is full-bodied and slightly spicy with a sweet aftertaste. It's a great drink hot or iced, with or without milk and sweetener. Related to the rooibos plant, honeybush is easily recognized by the masses of deep-yellow flowers that emit a sweet honey aroma, hence the name. Almost all honeybush is currently harvested from the wild, mountainous regions of South Africa, and great care is taken to preserve its habitat. According to tradition, it is harvested during the flowering period during September and October. The entire harvesting process is very tedious and labor intensive. Honeybush is hand cut by harvesters who use sickles. The stems are then made into bundles of 15 to 20 pounds and transported to a lower collection point using wire and a pulley system. The honeybush is then moved to the processing plant where it is placed in a large stainless steel tank. The tanks, or fermentation ovens, produce about 350 pounds of dry tea every 80 hours. In 1618, the Chinese ambassador presented several chests of tea as a gift to Czar Alexis. Just 70 years later in 1689, Russia and China signed the Treaty of Nerchinsk to establish a common border so that regular camel caravans could transport hundreds of pounds of tea via Mongolia. The caravans followed one of the longest and most difficult overland routes the world has ever known. The entire trip from China to Russia was 11,000 miles and took 16 months. After the Trans-Siberian Railway was completed in 1905, the trip took only seven weeks and the mighty caravans faded into history. Two grades of tea were transported by the Russian caravans. The first was a very low grade leaf, powdered and then pressed into bricks. The second, referred to as "Russian Caravan Tea" was a very high grade black tea which the Russians carried overland in order to prevent its deterioration from a long ocean voyage. The Russians liked their tea very strong with a deep rich color and robust aftertaste. Yunnan leads all other Chinese provinces in black tea production. Yunnan black teas are produced from a strain of ancient native broad leafed (dayeh) tea bushes which are also used for the famous medicinal Pu-erh tea. These tea bushes grow along the Lancang River in southern Yunnan province. They have a longer life span, earlier and stronger buds, fat shoots, and thick, soft leaves. As evidence of how important climate and soil conditions are to tea bushes, if this native broad leafed Dayeh strain is transplanted anywhere else in China, it produces the typical "China leaf" which is narrow, thin and dull in comparison. Gyokuro is one of the most expensive and renowned green teas available in Japan. It was first discovered in 1835 by Yamamotoyama Tea Company's sixth owner Yamamoto Kahei. Gyokuro is produced exclusively in the famed tea gardens of Uji near Kyoto, Japan. The name gyokuro translates to "jade dew", which refers to the luminescent pale green color of the liquor. Gyokuro is highly revered in Japan for purity of flavor and depth of the "green" taste that is so unique to Japanese tea. Gyokuro is one of Japan's few hand-plucked, shade-grown teas. In late April or early May, when the first buds appear on the tea bushes, canopies called tanas are placed over the bushes for about three weeks. As the leaves mature, more screening is added until more than 95% of the sunlight is excluded. The leaves are plucked by hand, then steamed, dried and rolled until they resemble pine needles. The final stage is oven-firing (roasting) the tea. The shade forces the leaves to produce a higher amount of chlorophyll in the leaves and reduces the bitter elements which makes for a very fresh-tasting, full-flavored brew, unmatched by any other green tea. Darjeeling is a small resort town situated in northwest Bengal, 400 miles due north of Calcutta in the small neck of Indian Territory that separates Nepal and Bhutan. These teas are darker and milder in taste than the first flush, but still possess the characteristic Muscat flavor. The autumnal flush is harvested in mid October and early November. Its subtle flavor can be enjoyed through several infusings with each one revealing a different nuance. When brewing Mutan White, be sure to add a little extra to your infuser as it is very fluffy and light. However, do not fill the infuser more than half full, as the tea needs room to infuse properly. White tea is mainly produced in the Fujian province in China. Mutan White is made from the leaves of the da bai or "big white" bush and mixed with buds from the shui hsien or "water sprite" tea plant. The leaves have silver tips and are predominantly greenish-brown in color and very flat. The buds are lustrous, soft and silvery. Its name, a literal translation from the Chinese, probably comes from the very pale color of its liquor. White tea comes from a rare strain of the tea plant and is harvested only a few days of the year. Once harvested, white tea is not oxidized or rolled, but simply withered and dried by steaming

- Pu-Erh Tuo Cha Tea100 G Loose: $11.50Pu-erh Tuo Cha's leaves have been hand-formed into the shape of tiny bowls or tuo cha ("birds nests") and individually wrapped. This tea brews a reddish cup with a mild and slightly sweet earthy flavor. Pu-erh, known in old Chinese as "black tea", is tea that is actually fermented. Depending on which type of pu-erh is being manufactured, the leaf may or may not oxidize; however, microbial activity involving several different bacteria does take place both in and on the leaf. The particularly large leaves can be either oxidized ("cooked") or nonoxidized ("raw"). Pu-erh can be loose-leaf or compressed into the traditional round cakes (known as bing cha) and other interesting shapes, such as mushrooms, spheres, cubes, pyramids, coins and more. The leaves can also be infused several times. The large leaves used in the manufacture of highest-quality pu-erh are plucked from the long-lived tea bushes that grow abundantly in southern Yunnan Province. The leaf used to make both cooked and raw pu-erh cakes is sun-dried leaf from the local tea trees. To achieve the distinctive flavor and aroma of pu-erh, the tea is heaped into piles and a controlled amount of moisture is introduced to the leaves. As the bacterial process begins to affect the nature of the tea, the piles are carefully turned and monitored as heat begins to generate within the pile. The heat combined with moisture encourages the natural bacterial fermentation integral to the tea's character and flavor

- Himalayan Shilla Oolong Tea50 G Loose: $13.50This first flush oolong is from the small Jun Chiyabari Tea Garden in the eastern Himalayan foothills region of Nepal. The Garden, established in 2001, is located at a 6500 foot elevation and is approximately 120 miles east from Kathmandu and 40 miles west of Darjeeling. The tea is named Shilla to honor the Hindu Vaishnav story of Shalligram, which is a black spherical rock only found in the ancient riverbed of the Gandak River in Nepal. According to the Puranas (one of the holy books) Shalligram Shila, a manifestation of God Vishnu, changed into a black rock to be near his consort, Laxmi, who had been cursed and turned into a tulsi plant by Saraswati, another Hindu goddess. The very long twisted leaves of this tea open to lovely full leaves when infused. This oolong has a medium astringency and medium body with flavor notes reminiscent of a Darjeeling. It brews a rich amber color in the cup with a fresh aroma

- Formosa Oolong Bay Jong Tea50 G Loose: $15.00Formosa Oolong Bay Jong is light green in color and brews a pale yellow-green cup. The large leaves unfold during brewing to show off the top two leaves and bud. The liquor is very aromatic and slightly floral. The flavor is delicate with no hint of astringency or bitterness. This tea is best enjoyed during quiet times when you can really appreciate its intricate flavor and aroma. The production of top quality oolong tea is very labor-intensive. After being plucked, fresh shoots from the tea plants are spread on a flat bamboo basket and withered in sunlight for up to an hour. The leaves are then withered indoors at room temperature for six to eight hours. Once an hour the leaves are gently agitated by hand which greatly accelerates the production of flavor components. The leaves are then pan-fired for 15 minutes at high temperatures which inactivate the leaf enzymes and stop the oxidation process. Finally the leaves are rolled and dried. The plants selected for oolong tea production are chosen for their strong flowery aroma and beautiful large leaves. The extraordinary quality of Formosa Oolong Bay Jong comes only from Yilan County in northeast Taiwan where the soil and climate are perfect for this type of tea. The tea estates here are situated at an elevation of over 3500 feet. The Bay Jong tea is produced in very small quantities and is available only during the early stages of the harvest. Teas harvested later in the year do not produce the same wonderful flavor
