Yucich township, situated on the shores of the scenic sun moon lake of central taiwan, was chosen for its ideal climate and soil to grow assamica tea bushes. The japanese objective was to compete with the british commerce that dominated the market of black tea. They could not compete in the yield, but the quality of the taiwanese black teas garnered attention in new york and london. But by the end of wwii, black tea had virtually disappeared from the island. Through the recent revival of this heritage assam tea, its easy to understand why this tea was successful . The tres. No. 8 strand presents itself as a large, wonderfully curled and lustrous full leaf; with a fruity aroma that evokes stewed cherries and apricot jam. Iccha means "first flush" and kariban refers to the trimmings in between pluckings. After first flush, the tea bushes are pruned to reestablish a level plucking table and the trimmings are typically sorted out for bancha tea. In this case, combined with the first flush leaves they add a unique flavor and complexity to this tea. Another processing technique that sets iccha kariban apart is withering; typically japanese teas are not withered but instead steamed to denature the organic compounds. Iccha kariban has been allowed to slightly wither prior to steaming which develops floral aromas of jasmine and honeysuckle. These delicate floral notes accent the vegetal character typical of japanese teas. This is a one of a kind cup producing a beautiful floral aroma and a brothy liquor with flavors of nori and asparagus.
