David Thiel has fond memories of his grandmother pinching his cheeks after placing a made-from-scratch Mexican meal in front of him and his brother as a child and saying, “Eat up, my little gorditos,” using “little fat ones” in the affectionate way that only a grandmother can do. Decades later, his grandmother’s loving endearment became the inspiration for Gordito’s Mexican Restaurant, the family owned restaurant that has been serving Lubbock, TX with delicious, authentic Mexican food since 2009.
