They did a nice job, but I don't feel I got all my meat back, The steer had a swinging weight of 650 lbs. I got back 350 lbs, and I had them do a light trim, leaving the fat on the roasts and steaks. It should have been a lot closer to, or slightly above 400 lbs. Just feel like they shaved a little off for themselves. or were careless and wasteful with my meat. Going to try to find a better, or more honest butcher next time.
