In 1992, Rodney Anderson and his father founded the Panchero's Mexican Grill concept and opened two units, one near the University of Iowa campus in Iowa City, Iowa, and one near the Michigan State University campus in East Lansing, Mich. During the next several years, Panchero's built a loyal following with college students who were drawn to Panchero's oversized burritos filled with fresh ingredients. In 1998, Panchero's began to serve homemade tortillas that are pressed out with every order. In 2000, Panchero's began taking its concept to the suburbs, opening restaurants throughout the United States. Panchero's Mexican Grill s corporate office is located in Coralville, Iowa.
